I just realized that I have not yet posted my recipe for chocolate brownies. I apologize for the delay, but here it is.
1 cup butter, melted
2 cups granulated sugar
2 tsp vanilla extract
4 eggs
3/4 cup cocoa
1 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 cup chocolate bits
- Preheat oven to 350F.
- Mix the melted butter, sugar, and vanilla extract.
- Add in the eggs, one at a time, beating well after each addition.
- Beat in cocoa until blended well.
- Beat in the baking powder and salt until blended.
- Beat in the flour until blended.
- Make sure to get all the stuff from the sides of the bowl.
- Stir in chocolate bits.
- Pour into a greased pan (9 x 13 inches).
- Bake at 350F for 30 min (check at 25 first time, ovens can vary).
- Let the brownies cool before cutting into bars.
Notes:
- Use Ghirardelli cocoa and Ghirardelli 60% chocolate chips for above average quality brownies.
- Adjust the baking time for how you like your brownies. Start by checking after 25 minutes, and every minute after. When a toothpick or cake tester comes out clean, they are done.
- I usually cut the pan into 24 brownies (6 x 4). Cut off the edges for fancy presentation. Your friends will like eating the edges when you cut them, and for fancy events, no-edge brownies are a nice touch.

* CHOCOLATE MIXTURE -
* 120 grams chocolate chips (Nestle Melts)
* 120 grams butter
* 150 grams brown sugar
* 2 eggs
* 60 grams flour
* CREAM CHEESE MIXTURE -
* 1 eggs
* 60 grams sugar
* 40 grams custard sugar
* 250 grams cream cheese
Preheat oven to 200°C. Fan forced 180°C.
In saucepan, over low heat, melt chocolate chips with the butter then add brown sugar. Set aside.
Beat 2 eggs in a bowl with an electric mixer add chocolate mixture then gradually add flour just until combined. Set aside.
For the cream cheese mixture- Beat 1 eggs with sugar and custard sugar until white and fluffy. Add cream cheese mix well until smooth and creamy.
Evenly place 2/3 of the chocolate mixture into a greased with flour covered baking dish (20×20cm) then place all of the cream cheese mixture and finish off with the reminding chocolate mixture. (3 layers)
Use a fork and make a pattern in the batter and bake on the middle shelf for approximately 40 minutes. Insert a toothpick in the cake centre; if it comes out clean the cake is done. Enjoy!
